This image drips with drama. The lobster tails are the food stars caught by a spotlight against a dark background with a suggestion of fog. The supporting cast is made up of poppy seed toast, sugar cane skewers, a lobster's tail shell and an interesting mixture of colorful sauces. It looks delectable and fulfilling.

This photograph was taken in the dining area of the Alley Grille restaurant. John says "My client had seen an image I had made using dry ice, and wanted to give this plate the same feel. So we (Diane Long and I) placed the plate in a serving tray, adding the dry ice in water." The picture was taken using a Rollei view camera fitted with a Phase 1 P40 digital back. Diane is a food stylist and her company is known as Long On Style.

"The key to this shot was controlling the reflected light," says John. "We spent about an hour and a half on this image - a lot of it trying to get the right flow of the fog."
